Rice Cake Stack
When you're short on time, this rice cake stack is an easy savoury lunch or snack that you can make quickly.
Serves: 1 (using 2 rice cakes)
INGREDIENTS
- 2 thick rice cakes
- 2 slices ham (80g) or equivalent in smoked salmon
- 1 slice cheese OR 70g avocado (around a third of a standard sized avo)
- 4 slices of tomato
- Salt and pepper to taste
METHOD
Spread the avocado or split half the cheese slice on each rice cake, layer ham and tomato (2 per cake) on top. Add salt and pepper to taste.
