These oven baked chips are a great carb option for meals; simple to make and quick to get onto the table. You can use any root vegetable - carrots, kumara, potatoes, pumpkin, or even a combination of several types for variation.

INGREDIENTS

  • Around 4 medium-sized root vegetables (washed, some can be left unpeeled), sliced into 1cm sticks
  • 1-2 tbsp olive oil
  • Salt and pepper to taste

METHOD

Line an oven tray with baking paper and preheat oven to 220 degrees celsius. Place your vegetable sticks in a single even layer and drizzle with olive oil. Season with salt and pepper.

Bake in oven for around 25 minutes or until veges are cooked and turning golden.

TIP: Try to keep your vege sticks as close to 1cm as you can to ensure they cook evenly.
