Lamb Koftas
Are meatballs a big hit in your household but want to try something a little bit different? Try these Greek-style lamb koftas. Packed full of flavour, these are great served as mini meatballs on a sharing platter or perfect to put into pita bread with tzatziki and salad.
INGREDIENTS
- 400-500 grams lean minced lamb
- 1/4 cup breadcrumbs
- 1 small onion (red or white, grated or finely chopped)
- 1 egg
- 1 tbsp or 2 cloves of garlic, minced
- 1 tbsp olive oil
- 2 tbsp cumin
- 2 tbsp coriander powder
- 1 bunch mint, finely chopped
- 1 bunch parsley, finely chopped
- Chilli flakes to taste (optional)
METHOD
Preheat a large frying pan over a medium heat with a tablespoon of olive oil. Combine all ingredients together in a bowl, then shape into meatballs (for standard sized ones, they should be a little smaller than what fits into a cupped hand).
Pan fry meatballs, turning regularly until browned. If they begin to cook too fast, turn the heat down and cover frying pan with a lid. Cook until browned on the outside and cooked through.
