Hoisin Pork Lettuce Cups
If you're after a quick and flavourful meal that is simple to prepare, look no further than these lettuce cups. There's plenty of veges included so you know you're getting plenty of vitamins, minerals and fibre too.
INGREDIENTS
- 400g pork mince
- 1/4 cup hoisin sauce
- 150g vermicelli noodles (approximately), soaked and prepared according to packet instructions
- 1-2 cos lettuce
- 1 onion
- 1 carrot, cut into thin sticks
- 1 capsicum, finely diced
- 1 cucumber, finely diced
- 1 tbsp sesame oil
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1 tbsp crushed chilli (optional, adjust if you prefer less heat)
- 1 tsp fish sauce
- Pepper to taste
METHOD
Heat sesame oil in a large heavy based frying pan. Saute onion, carrot, ginger, garlic and chilli until tender and fragrant.
Add pork mince, breaking up any chunks and continue to stir until browned and cooked through. Add hoisin sauce, fish sauce and pepper.
Stir through prepared vermicelli noodles until well combined. If the mixture begins to get too dry, add a little water.
To serve, break off cos lettuce leaf and place on plate. Spoon mince mixture on top. Garnish with diced capsicum and cucumber.
TIP: If you don't like raw capsicum, you can add it into the mince mixture and cook it.
