Feijoa, Apple & Honey Muffins
Feijoas are a firm favourite in Kiwi households and their appearance signals that Autumn is here. These muffins are a great snack or lunchbox addition that are low in table sugar but have plenty of sweetness from the fruit and honey. You'll also get fibre from the fruit, coconut and oat bran used.
Note: If preferred you could remove the sugar completely and add a little extra honey instead.
INGREDIENTS
- 5-6 feijoas
- 1 apple, peeled and cored
- 1 cup flour
- 1/2 cup oil
- 1/2 cup dessicated coconut
- 1/2 cup oat bran
- 1/3 cup raw honey
- 1 egg
- 2 tblsp brown sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cinnamon
METHOD
Scoop feijoa flesh into a bowl and mash with a fork. Cut the apple into quarters and finely slice, add into bowl. Add oil, honey and vanilla extract. Add egg and mix to combine.
Add dry ingredients - flour, coconut, oat bran, sugar, baking soda, baking powder, cinnamon - to bowl and stir until just combined.
Scoop mixture evenly into a 12-hole muffin tray, bake at 160 degrees celsius for 20-25 minutes until they are cooked through and browned on top.
