Corn Fritters

These are such a Kiwi classic! Corn fritters are simple to make and make a great side dish, main, or make small one for a healthy addition to kids' lunchboxes.

INGREDIENTS

  • 1 can (410g) creamed corn
  • 1 cup flour
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp dried parsley or other herbs
  • A splash of water
  • Olive oil
  • Salt, pepper and chilli to taste (optional)

METHOD

Combine all ingredients except the olive oil together in a large bowl and stir until combined. Heat a large frying pan to medium heat. Add 1-2 tbsp of oil to lightly coat the bottom of the pan, place large spoonfuls of the mixture into the pan then cook until bottom is golden and bubbles appear on the top. Flip and repeat on the other side until fritters are cooked through.

Repeat until all batter is used.
