Banana Coconut Chia Loaf

This delish loaf is great for using up ripe bananas. Nutritionally boosted with chia seeds, eat it on its own, with caramel sauce or vanilla ice cream as a treat.

It's important to make sure you allow the chia seeds enough time to soak, so don't skip this step!

INGREDIENTS

  • 2 tbsp chia seeds
  • 1 cup water
  • 3 ripe bananas, mashed
  • 1/2 cup desiccated coconut
  • 1/4 cup oil
  • 1/4 cup runny honey
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 1 tsp vanilla extract

METHOD

Combine chia seeds with water and soak for at least 10 minutes until they become gelatinous. Add the chia seeds to the mashed banana, desiccated coconut, oil, vanilla extract and honey, then stir to combine.

Add flour, baking power and baking soda, and stir to combine.

Pour into two loaf tins and bake at 180 degrees for around 35 mins or until top is browned and they are cooked through (as it's got bananas in it, you won't be able to skewer test this loaf).

Allow to cool then store in an airtight container.
